  2. Wash and peel sweet potatoes, then cut into 1-inch cubes. In a bowl, combine sweet potato cubes with olive oil, salt, and pepper, tossing gently.
  3. Remove heated baking pan and line with parchment paper. Spread sweet potato cubes in a single layer on the parchment.
  4. Roast sweet potatoes in the oven for 20-25 minutes, tossing halfway through to ensure even browning.
  5. After 25 minutes, remove the pan and sprinkle minced garlic and grated parmesan over the sweet potatoes. Return to the oven for another 8-10 minutes until cheese is melted.
