Method
 

Step-by-Step Instructions
  1. Heat a large cast iron skillet over medium heat. Add olive oil and 2 tablespoons of ghee.
  2. Add cubed Yukon Gold potatoes, season with garlic, thyme, oregano, sea salt, and black pepper. Sauté for 8-10 minutes until golden brown and fork-tender.
  3. Increase heat to medium-high, add remaining ghee, then the sirloin steak bites, seasoning lightly with salt and pepper. Sear for 2-3 minutes, then turn and cook for another 1-2 minutes.
  4. Combine cooked potatoes with seared steak in the skillet, mix thoroughly and adjust seasoning. Heat together for 1-2 minutes.
  5. Remove from heat, transfer to a serving dish, garnish with fresh parsley if desired, and serve immediately.
