  • 1/4 cup Coconut Rum Or double dark rum
  • 1 cup All-Purpose Flour Gluten-free option available
  • 1 cup Sweetened Coconut Unsweetened option available
  • 1 large Eggs Can substitute with flaxseed meal for vegan
  • 1/2 cup Coconut Milk Almond milk can be used as a dairy-free alternative
  • Vegetable Oil for frying Any neutral oil will do
For the Cream Frosting
  • 8 oz Cream Cheese Softened; mascarpone is a great alternative
  • 1 cup Powdered Sugar Adjust to taste for desired sweetness

Method
 

Preparation
  1. Soak pineapple rings in dark rum for at least 30 minutes.
  2. In a medium bowl, whisk together flour, shredded coconut, and one egg to form a thick batter.
  3. Dip each rum-soaked ring into the batter ensuring full coating.
  4. Heat vegetable oil in a pan over medium heat until it reaches 350°F (175°C).
  5. Fry rings for 2-3 minutes on each side until golden brown.
  6. Remove from oil and drain on paper towels.
  7. Mix softened cream cheese and powdered sugar until smooth for the frosting.
  8. Serve warm with the cream frosting for dipping.
