Ingredients
  

For the Salad
  • 1 package Frozen Cheese Tortellini Cook until al dente
  • 6 slices Bacon Cook until crispy
  • 1 medium Red Onion Finely chopped
  • 1 cup Tomatoes Cherry tomatoes, halved
  • 1/2 cup Pepperoncini Peppers Substitute with banana peppers if desired
For the Dressing
  • 1/2 cup Mayonnaise Can substitute with Greek yogurt
  • 2 tbsp Red Wine Vinegar May substitute with lemon juice
  • 1 tsp Oregano Dried
  • 1 tsp Italian Seasoning Dried
  • 1/2 tsp Garlic Powder Can use fresh garlic instead
  • 1/4 tsp Red Pepper Flakes Adjust to taste
  • to taste Salt For seasoning
For Toppings
  • 1/3 cup Parmesan Cheese Grated, can substitute with Pecorino Romano

Method
 

Cooking Instructions
  1. In a skillet over medium heat, cook the bacon until crispy, about 6–8 minutes. Drain grease and chop.
  2. Bring a large pot of salted water to a boil. Cook tortellini according to package instructions, about 5–7 minutes, then drain and rinse with cold water.
  3. In a mixing bowl, combine mayonnaise, red wine vinegar, salt, oregano, Italian seasoning, garlic powder, and red pepper flakes. Stir until smooth.
  4. Add cooked tortellini, bacon, pepperoncini, Parmesan cheese, red onion, and tomatoes to the bowl. Toss gently to combine.
  5. Cover and refrigerate for at least 1 hour to allow flavors to meld.
  6. Stir before serving and enjoy chilled or at room temperature.
