  • 3 medium Overripe Bananas very ripe with brown spots
  • 1/2 cup Melted Butter or coconut oil for dairy-free
  • 2 cups Almond Flour do not substitute with regular flour
  • 1/2 cup Erythritol or preferred keto sweetener
  • 1 teaspoon Cinnamon optional
  • 1 teaspoon Baking Powder ensure it's fresh
  • 1/2 cup Crushed Walnuts optional; can use pecans or chocolate chips
Topping (optional)
  • 1/4 cup Reserved Crushed Walnuts for topping

Method
 

Baking Instructions
  1. Preheat your oven to 180°C (356°F). Gather all your ingredients for easier preparation.
  2. In a large mixing bowl, combine the eggs, mashed overripe bananas, and melted butter. Beat on medium speed for about 2-3 minutes until smooth.
  3. In a separate bowl, whisk together the almond flour, erythritol, cinnamon, and baking powder until uniform.
  4. Gradually add the dry mixture to the wet ingredients, mixing gently until just combined. Do not overmix.
  5. Fold in the crushed walnuts, reserving some for the topping. Ensure even distribution.
  6. Line a small loaf tin with parchment paper, pour the batter into the pan, and sprinkle the reserved walnuts on top.
  7. Bake for about 40 minutes, checking at 30 minutes. Cover with foil if it browns too quickly.
  8. Remove from the oven and allow to cool in the tin for at least 30 minutes before slicing.
