Baking Instructions
- Preheat your oven to 180°C (356°F). Gather all your ingredients for easier preparation.
- In a large mixing bowl, combine the eggs, mashed overripe bananas, and melted butter. Beat on medium speed for about 2-3 minutes until smooth.
- In a separate bowl, whisk together the almond flour, erythritol, cinnamon, and baking powder until uniform.
- Gradually add the dry mixture to the wet ingredients, mixing gently until just combined. Do not overmix.
- Fold in the crushed walnuts, reserving some for the topping. Ensure even distribution.
- Line a small loaf tin with parchment paper, pour the batter into the pan, and sprinkle the reserved walnuts on top.
- Bake for about 40 minutes, checking at 30 minutes. Cover with foil if it browns too quickly.
- Remove from the oven and allow to cool in the tin for at least 30 minutes before slicing.
