Ingredients
  

For the Tofu
  • 1 block Super Firm Tofu Opt for vacuum-sealed for best texture.
  • 2 tablespoons Olive Oil Or use neutral oil like avocado.
For the Marinade
  • 1 cup Vegan Yogurt Unsweetened.
  • 2 tablespoons Dijon Mustard Enhances flavor complexity.
  • 1 tablespoon Agave or Sugar For sweetness.
  • 1 tablespoon Lemon Juice Provides acidity.
  • 1 teaspoon Lemon Zest Adds zing.
  • 2 tablespoons Soy Sauce For umami flavor.
  • 2 cloves Minced Garlic For depth of flavor.
  • 2 tablespoons Nutritional Yeast Offers a cheesy flavor.
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Oregano

For Serving
  • 4 pieces Pita Bread Try whole wheat or gluten-free options.
  • 1 cup Vegan Tzatziki For drizzling or dipping.

Method
 

Preparation Steps
  1. In a mixing bowl, whisk together vegan yogurt, Dijon mustard, agave, lemon juice and zest, olive oil, soy sauce, minced garlic, nutritional yeast, smoked paprika, onion powder, dried oregano, thyme, salt, and pepper until smooth.
  2. Pat super firm tofu dry and cut into bite-sized chunks.
  3. Toss tofu cubes in the marinade and let soak for at least 15 minutes.
  4. Thread marinated tofu onto skewers and cook in a skillet over medium heat with olive oil for about 3 minutes on each side.
  5. Remove from skillet and toss cooked tofu with reserved marinade.
  6. Warm pita bread in a skillet and serve with marinated tofu skewers and Vegan Tzatziki.
