- Preheat your oven to 450°F (232°C) to ensure crispy tortillas.
- Place corn tortillas on a baking sheet and brush both sides with canola oil.
- Bake the tortillas for about 10 minutes, flipping halfway through.
- In a medium saucepan over medium heat, combine shredded rotisserie chicken, taco seasoning, a splash of salsa, black beans, and corn. Cook for 5 minutes.
- Top each tortilla with about ½ cup of the warm chicken mixture.
- Sprinkle ¼ cup of shredded cheese over each tortilla and bake for 5 more minutes until the cheese is melted.
- Garnish with fresh cilantro and diced tomatoes and serve warm.
