  • 1 medium tomato thick slices for freshness
  • 4 slices cheddar cheese can substitute with Swiss, provolone, or American
  • 1 spray cooking spray to prevent sticking

Method
 

Step-by-Step Instructions for Fried Bologna Sandwiches
  1. Spread 1 tablespoon of mayonnaise on one side of each slice of bread.
  2. Place a thick slice of fresh tomato on top of the mayonnaise-coated side of each slice of bread.
  3. Top each tomato slice with a generous piece of cheddar cheese.
  4. Spray the preheated skillet generously with cooking spray and heat it on medium-high.
  5. Cut an 'X' into the center of each bologna slice.
  6. Carefully place the bologna into the hot skillet and fry for 3-4 minutes per side.
  7. Once the bologna is cooked, place three slices on top of each stack of tomato and cheese.
  8. If desired, toast the assembled sandwiches in the skillet for an additional 2-3 minutes on each side.
  9. Remove the sandwiches from the skillet and cut them in half. Serve hot.
