Method
 

Preparation
  1. Start by cleaning the whole chicken under cold water and pat dry with paper towels.
  2. In a mixing bowl, combine lemon juice and zest, minced garlic, and chopped herbs.
  3. Apply the herb-lemon marinade inside and outside the chicken; marinate for 30 minutes.
  4. Chop the onion, carrots, and potatoes into bite-sized chunks.
  5. Preheat your oven to 400°F (200°C) and place the chicken in the roasting dish surrounded by vegetables.
  6. Roast in the preheated oven for about 1 hour to 1 hour and 15 minutes.
  7. Baste the chicken halfway through the cooking time and rotate the pan.
  8. Remove from the oven, cover loosely, and let it rest for 10-15 minutes.
  9. Carve the chicken and serve alongside the roasted vegetables.
