For Seasoning
  • 1 tsp Smoked Paprika
  • 1 tsp Seasoned Salt
  • 1 tsp Cumin
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Black Pepper
  • 1/2 tsp Turmeric
  • 1/4 tsp Cayenne Pepper Adjust for spice level.
For Topping
  • 1 cup Tzatziki Sauce Store-bought or homemade.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
  2. Combine diced chicken with lemon juice, olive oil, and spices. Marinate for at least 30 minutes.
  3. Transfer marinated chicken to the baking dish. Add rice, zucchini, and chicken broth. Stir until evenly combined.
  4. Cover the dish tightly with aluminum foil and bake for about 40 minutes.
  5. Check if the rice is tender and most broth is absorbed. Add additional baking time if needed.
  6. Let the dish rest for a few minutes, then fluff the rice and serve with tzatziki sauce.
