Preparation
- Wash the strawberries gently and pat them dry. Cut off the stems and slice each strawberry in half lengthwise. Trim the back to create a flat surface.
- Hollow out the center of each strawberry half using a melon baller or small spoon.
- In a bowl, pour the heavy whipping cream and beat until stiff peaks form, about 5 minutes.
- In another bowl, blend cream cheese, sour cream, sugar, vanilla extract, and lemon juice until smooth.
- Gently fold the whipped cream into the cream cheese mixture until combined.
- Fill the strawberries with the cheesecake mixture using a piping bag fitted with a star tip.
- Sprinkle graham cracker crumbs on top of each filled strawberry before serving.
