Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking pan by lining it with parchment paper or greasing it with coconut oil.
  2. In a large mixing bowl, whisk together the eggs, pumpkin puree, maple syrup, coconut sugar, melted coconut oil, and vanilla extract until smooth.
  3. Add oat flour, rolled oats, pumpkin pie spice, and baking soda to the wet mixture, mixing gently until just combined.
  4. Fold in the chocolate chips, then transfer the batter to the prepared baking pan.
  5. Bake for 24–26 minutes, or until the edges are firm and a toothpick comes out clean.
  6. Let the bars cool in the pan for at least 10 minutes before transferring them to a wire rack to cool completely.
