Preparation

  3. Allow sweet potatoes to cool for about 10 minutes and gently peel off the skins.
  4. In a mixing bowl, combine sweet potato flesh with hemp seeds, almond milk, almond butter, maple syrup, cinnamon, and vanilla extract.
  5. Mix on medium speed until light and fluffy, about 2-3 minutes.
  6. Divide the mixture into bowls and top with blueberries, pumpkin seeds, and a dollop of Greek yogurt.
