  • 1 large head cabbage for wrapping and ease of rolling

  • 1 lb ground beef or mix of beef & pork; substitute with turkey or chicken if desired
  • 1 cup cooked white rice leftover works best
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 large egg beaten
  • 1/4 cup fresh parsley or dried, optional
  • 1 tbsp paprika to taste
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
For the Sauce
  • 2 tbsp olive oil or butter
  • 28 oz crushed tomatoes or tomato puree
  • 2 tbsp tomato paste
  • 1 tbsp sugar optional
  • 1 tbsp dried oregano or Italian seasoning
  • 1 cup beef or chicken broth for extra flavor

Method
 

Step-by-Step Instructions
  1. Prepare Cabbage: Bring a large pot of salted water to a boil. Core the cabbage and submerge it for 5-7 minutes until leaves soften. Peel off 12-14 leaves and set aside for stuffing.
  2. Cook Rice: Parboil 1 cup of rice in boiling water for about 7 minutes. Drain and cool on a baking sheet.
  3. Make Filling: In a mixing bowl, combine rice, ground meat, onion, garlic, egg, parsley, paprika, salt, and pepper. Mix gently until combined.
  4. Stuff Leaves: Lay a cabbage leaf flat, add 2-3 tablespoons of filling at stem end, fold sides over, and roll tightly. Repeat with remaining leaves.
  5. Prepare Sauce: In a skillet, heat olive oil and sauté garlic. Stir in crushed tomatoes, tomato paste, sugar, oregano, salt, and pepper. Simmer for 10 minutes.
  6. Assemble Rolls: Spread sauce over the bottom of a pot or baking dish. Arrange rolls seam-side down and pour remaining sauce over top.
  7. Cook Rolls: Cover and bake at 350°F for 1.5 to 2 hours, or simmer on low for 1.5 hours, or slow cook on low for 6-7 hours.
  8. Serve: Garnish with parsley or dill and serve warm with sides like mashed potatoes or bread.
