  • 1 large Egg beaten, for binding
  • 1 cup Parmesan Cheese freshly grated
  • 1 cup Breadcrumbs can use panko for better texture
  • 2 cloves Garlic minced
For Cooking
  • 1/4 cup Vegetable Oil for frying
  • 2 tablespoons Unsalted Butter for drizzling
For Topping
  • 1 cup Mozzarella Cheese shredded
  • 2 tablespoons Fresh Parsley chopped, for garnish

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pound the chicken breasts to an even thickness of about 1/2 inch.
  3. Set up three bowls: one with seasoned flour, one with a beaten egg, and one with the breadcrumb mixture.
  4. Coat each piece of chicken in the flour, dip in the egg, and then coat with the breadcrumb mixture.
  5. Heat vegetable oil in a skillet over medium heat until shimmering.
  6. Fry the coated chicken for 4-5 minutes on each side until golden brown.
  7. Transfer the chicken to the baking sheet, sprinkle with mozzarella, and bake for 8-10 minutes.
  8. Drizzle the finished chicken with melted butter and garnish with parsley.
