  • 2 pieces chicken breasts can swap with grilled tofu
  • 1/4 cup olive oil neutral oil can be used
  • 2 tablespoons lime juice for marinade
  • 2 teaspoons chili powder adjust for spice preference
  • 1 teaspoon smoked paprika regular paprika as substitute
  • 1 teaspoon cumin coriander is an alternative
  • 1/2 teaspoon garlic powder can use fresh minced garlic
  • 1/2 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper freshly cracked
For the Base
  • 2 cups cooked rice use brown rice or quinoa for added protein
  • 1 cup black beans canned for convenience
  • 1 cup corn kernels grilled or canned
  • 1 cup cherry tomatoes any tomato variety works
For the Toppings
  • 1 medium avocado for creaminess
  • 1/2 medium red onion can use green onion as substitute
  • 1/4 cup fresh cilantro omit if not preferred
  • 2 wedges lime for serving

Method
 

Directions
  1. In a medium bowl, whisk together ¼ cup of olive oil, lime juice, and spices.
  2. Coat the chicken breasts thoroughly with marinade and let sit for at least 15 minutes.
  3. Heat a grill pan over medium-high heat and add marinated chicken, cooking for 5-6 minutes on each side until golden brown.
  4. Prepare rice according to package instructions, stirring in lime juice and chopped cilantro once cooked.
  5. Assemble bowls with lime-infused rice, black beans, corn, tomatoes, and sliced chicken.
  6. Drizzle with cilantro lime dressing and serve with lime wedges.
