Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line a 9x13-inch baking pan with parchment paper or lightly grease it.
  3. In a mixing bowl, combine the crust ingredients and cut in the butter until it resembles coarse crumbs. Press the mixture into the prepared baking pan.
  4. Bake the crust for 15-20 minutes or until lightly golden. Allow to cool slightly.
  5. In another bowl, whisk together the filling ingredients except for rhubarb. Gently fold in the rhubarb.
  6. Pour the rhubarb filling over the cooled crust, spreading it evenly.
  7. Return to the oven and bake for 40-45 minutes until set and golden on top.
  8. Let cool completely in the pan before slicing into bars.
