Preparation
- Preheat your oven to 350°F (175°C).
- Line a 9x13-inch baking pan with parchment paper or lightly grease it.
- In a mixing bowl, combine the crust ingredients and cut in the butter until it resembles coarse crumbs. Press the mixture into the prepared baking pan.
- Bake the crust for 15-20 minutes or until lightly golden. Allow to cool slightly.
- In another bowl, whisk together the filling ingredients except for rhubarb. Gently fold in the rhubarb.
- Pour the rhubarb filling over the cooled crust, spreading it evenly.
- Return to the oven and bake for 40-45 minutes until set and golden on top.
- Let cool completely in the pan before slicing into bars.
