Step-by-Step Instructions for Mango Bars
  1. Preheat the oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  2. In a mixing bowl, combine all-purpose flour, granulated sugar, and salt. Cut in cold butter until resembling coarse crumbs. Press into the bottom of the pan and bake for 15-20 minutes until golden brown.
  3. While the crust cools, blend mangoes until smooth. In another bowl, whisk eggs and sugar together. Gradually stir in mango puree, lime juice, flour, and salt until smooth.
  4. Pour the mango filling over the cooled crust, spreading it evenly. Bake for 25-30 minutes until set with a gentle jiggle.
  5. Remove from the oven and cool at room temperature for about 30 minutes. Chill in the refrigerator for at least 2 hours before cutting.
