  • 1 lb ground beef or ground turkey/chicken for a leaner option
  • 1 sweet onion, chopped yellow onion works too
  • 1 orange bell pepper, seeded, chopped omit for stricter low-carb diets
  • 3 garlic cloves, chopped or garlic powder as a substitute
  • 14 oz fire roasted diced tomatoes or fresh tomatoes/tomato sauce
  • 1/2 teaspoon smoked paprika or regular paprika
  • 1/2 teaspoon dried oregano or Italian seasoning
  • 1/2 teaspoon garlic powder omit if using fresh garlic
  • 1/2 teaspoon onion powder optional if using real onions
  • salt/pepper to taste
  • 1 small head green cabbage, cored, chopped red cabbage as a variant
  • 2 cups shredded cheddar/jack cheese or dairy-free cheese for lactose-free diets

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of oil in a skillet over medium-high heat. Add ground beef, chopped onion, and bell pepper, and sauté until the beef is browned and the onions are translucent, about 5–7 minutes.
  2. Stir in chopped garlic and sauté for an additional minute.
  3. Add diced tomatoes, smoked paprika, oregano, garlic powder, onion powder, salt, and pepper. Stir and let simmer for 2–3 minutes.
  4. Layer chopped cabbage on top of the beef mixture, cover, and cook on low for 15–20 minutes until cabbage is tender.
  5. Uncover and sprinkle cheese over the top. Cover and allow cheese to melt on low heat for 3–5 minutes.
