Ingredients
  

Low Carb Version
  • 1 head Hearts of Romaine shredded
  • 6 slices Salami or prosciutto
  • 4 oz Provolone or mozzarella
  • 1 cup Cucumber sliced
  • 1 cup Red Pepper sliced
  • 1/4 cup Mild Pepper Rings optional
  • 1/2 cup White Onion sliced
  • 1/2 tsp Black Pepper
  • 1 tsp Dried Basil
  • 1/4 cup Parmesan or another hard cheese
  • 2 tbsp Red Wine Vinegar or apple cider vinegar
  • 3 tbsp Olive Oil or neutral oil
  • 1/2 tsp Garlic Powder or fresh garlic
  • 1 tsp Kosher Salt to taste
Traditional Version
  • 8 oz Tri-Color Tortellini cooked and cooled
  • 6 slices Pepperoni or another cured meat
  • 1 tbsp Brown Sugar or natural sweetener
  • 1 cup Marinated Mini Fresh Mozzarella Balls for bursts of flavor

Method
 

Preparation
  1. In a large mixing bowl, shred the hearts of romaine into bite-sized pieces and arrange salami, provolone, mozzarella balls, cucumber, red pepper, and white onion over the romaine.
  2. Lightly sprinkle with kosher salt, black pepper, and dried basil. Cover and refrigerate for at least 4 hours.
  3. In a separate bowl, whisk together red wine vinegar, olive oil, garlic powder, and brown sugar until combined. Cover and let it chill overnight.
  4. Before serving, either drizzle the dressing over the salad or serve it on the side.
