Method
 

Puff Pastry Prep
  1. Thaw the puff pastry overnight in the fridge; let it sit at room temperature for 15-20 minutes. Cut into 3x12 inch squares, brush with melted butter, and sprinkle with salt.
Baking
  1. Preheat oven to 400°F (200°C). Place pastry squares on a lined baking sheet and bake for 12-14 minutes until golden brown.
Chicken Preparation
  1. Season and grill chicken breasts until fully cooked, about 6-7 minutes per side. Allow to cool before chopping into small pieces.
Salad Assembly
  1. In a mixing bowl, combine chicken, celery, grapes, onion, and mayonnaise. Mix until evenly coated and adjust seasoning.
Fill Pastry
  1. Take bottom halves of the puff pastries, spoon in 2-3 tablespoons of chicken salad, and place the top halves gently.
Serving
