  • 1 tablespoon Lemon Juice fresh or bottled
  • 1 tablespoon Dijon Mustard or whole grain mustard
  • 1 cup Heavy/Whipping Cream or coconut cream for dairy-free

Step-by-Step Instructions for Creamy Mushroom Chicken
  1. Cut the chicken breasts in half lengthwise to create thinner cutlets. Season with salt and pepper, then dredge in flour.
  2. Heat olive oil in a large skillet over medium-high heat. Cook the chicken cutlets for 4-5 minutes per side until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, melt butter and add sliced mushrooms with Italian seasoning. Sauté for 5-7 minutes until golden brown.
  4. Add minced garlic and cook for 30 seconds. Pour in chicken broth, lemon juice, and Dijon mustard. Simmer for 3-4 minutes.
  5. Return mushrooms and chicken to the skillet, add cream, and simmer for 5 minutes or until heated through and sauce thickens.
  6. Season with additional salt and pepper to taste before serving.
