  • 1 teaspoon Paprika Smoked paprika for extra flavor.
  • 2 tablespoons Lime Juice Fresh juice offers the best results.
  • 0.25 cup Cilantro Fresh garnish; parsley as a milder substitute.

Method
 

Step-by-Step Instructions
  1. Cook the rice according to package instructions, about 15-20 minutes. Keep warm.
  2. Preheat oven to 400°F (200°C). Cut tofu into cubes and set aside.
  3. Combine cubed tofu with avocado oil, soy sauce, and cornstarch in a bowl and toss gently.
  4. Spread tofu on a lined baking sheet and bake for 20 minutes, flipping halfway.
  5. Heat avocado oil in a pan over medium heat. Sauté shallot, ginger, and garlic for 1-2 minutes.
  6. Add coconut milk, soy sauce, maple syrup, and paprika to the pan. Simmer for 3-5 minutes.
  7. Add baked tofu to the sauce, stirring and squeezing in lime juice.
  8. Serve the tofu over rice and garnish with cilantro.
