- Cook the rice according to package instructions, about 15-20 minutes. Keep warm.
- Preheat oven to 400°F (200°C). Cut tofu into cubes and set aside.
- Combine cubed tofu with avocado oil, soy sauce, and cornstarch in a bowl and toss gently.
- Spread tofu on a lined baking sheet and bake for 20 minutes, flipping halfway.
- Heat avocado oil in a pan over medium heat. Sauté shallot, ginger, and garlic for 1-2 minutes.
- Add coconut milk, soy sauce, maple syrup, and paprika to the pan. Simmer for 3-5 minutes.
- Add baked tofu to the sauce, stirring and squeezing in lime juice.
- Serve the tofu over rice and garnish with cilantro.
