Prepare the Filling
- In a medium mixing bowl, combine 2 cups of cooked shredded chicken, 1 ripe mashed avocado, ½ cup of plain Greek yogurt, and the juice of 1 lime. Add chopped cilantro along with salt, pepper, and garlic powder to taste. Mix evenly for 2-3 minutes.
Customize Your Flavor
- If you’d like to add flavor and texture, stir in ¼ cup of diced red onion or sliced green onions. Consider adding ½ cup of shredded cheddar cheese for a cheesy twist. Mix well for another minute.
Assemble the Roll-Ups
- Lay tortillas flat on a clean surface. Spoon a generous amount of the chicken and avocado mixture down the center of each tortilla. Spread evenly to create a stuffed wrap.
Roll and Slice
- Lift the edge of the tortilla closest to you and roll tightly around the filling, tucking in sides to create a secure seal. Slice each rolled tortilla into bite-sized pieces.

- Serve immediately, or wrap tightly in plastic wrap and store in the refrigerator for 1-2 days. For longer storage, freeze in plastic wrap.
