Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare muffin tin with cooking spray or liners.
  2. In a large bowl, combine rolled oats, brown sugar, baking powder, baking soda, cinnamon, and salt. Whisk until well blended.
  3. Add grated carrots, applesauce (or yogurt), vegetable oil, and vanilla extract. Stir until just combined.
  4. Optional: Gently fold in walnuts or raisins.
  5. Spoon batter into prepared muffin tin, filling each cup about two-thirds full.
  6. Bake for 15-20 minutes until golden brown and a toothpick inserted comes out clean.
  7. Cool muffins in the pan for 5 minutes, then transfer to a wire rack to cool completely.
