For the Chicken
  • 1 pound Chicken Breast cut into bite-sized pieces
  • 1 cup All-Purpose Flour for breading
  • 2 large Eggs beaten
  • 1 cup Panko Breadcrumbs or regular breadcrumbs
  • Oil as needed Oil for Frying for cooking chicken
For the Sauce
  • 1/2 cup Mayonnaise or Greek yogurt
  • 1/4 cup Sweet Chili Sauce store-bought or homemade
  • 1 tablespoon Sriracha Sauce adjust based on heat preference
For the Bowl
  • 2 cups Cooked Rice white, brown, or quinoa
  • 2 cups Shredded Lettuce can substitute with spinach or greens
  • 1 cup Sliced Cucumbers or shredded bell peppers
  • 1 cup Shredded Carrots can replace with radishes
Seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Method
 

Cooking Instructions
  1. Season the chicken pieces with salt and pepper to taste.
  2. Set up a breading station with flour, beaten eggs, and panko breadcrumbs.
  3. Coat each chicken piece with flour, dip in eggs, then coat with breadcrumbs.
  4. Heat oil in a pan over medium heat.
  5. Fry the chicken for 4-5 minutes on each side until golden brown.
  6. In a bowl, whisk together mayonnaise, sweet chili sauce, and sriracha for the sauce.
  7. Assemble the bowl with rice, lettuce, cucumbers, and carrots.
  8. Top with fried chicken and drizzle with Bang Bang sauce before serving.
