  • 2 pieces Mango ripe mangoes or thawed frozen chunks
  • 1 cup Cucumber diced, any mild variety
  • 1/2 cup Red Onion finely chopped
  • 1/4 cup Cilantro fresh, can be omitted
For the Dressing
  • 3 tablespoons Olive Oil extra virgin recommended
  • 1 tablespoon Fresh Lime Juice fresh for best flavor
  • 1 teaspoon Honey optional for sweetness
  • to taste pinch Salt
  • to taste pinch Pepper

Method
 

Preparation
  1. Select ripe avocados and mangoes. Peel and dice the avocado and mango into bite-sized pieces.
  2. Finely chop the cucumber, red onion, and cilantro.
Make Dressing
  1. In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper until smooth.
Combine Ingredients
  1. Gently toss the diced avocados, mangoes, cucumber, red onion, and cilantro together.
Dress Salad
