Method
 

Instructions
  1. Preheat your oven to 425°F (220°C) and line your baking sheets with parchment paper.
  2. In a large mixing bowl, combine the flour, baking powder, baking soda, sugar, salt, and spices. Whisk until well blended.
  3. Cube the cold butter and cut it into the dry mixture until it resembles coarse crumbs. Fold in the grated apple.
  4. Slowly pour in the buttermilk and gently fold until you have a wet, sticky dough.
  5. Lightly flour a clean surface and turn out the sticky dough. Knead gently for about 30 seconds.
  6. Flatten the dough into an oval shape about 1-inch thick and fold the sides inward to create layers, repeating the folding about seven times.
  7. Cut out rounds using a floured biscuit cutter and place them on an ungreased baking sheet.
  8. Bake for 20 minutes until golden brown and puffed.
  9. While the biscuits bake, melt the unsalted butter, stir in honey and a pinch of salt for the glaze.
  10. Brush the warm honey butter glaze generously over the tops of the biscuits immediately after removing from the oven.
