- Preheat your oven to 425°F (220°C) and line your baking sheets with parchment paper.
- In a large mixing bowl, combine the flour, baking powder, baking soda, sugar, salt, and spices. Whisk until well blended.
- Cube the cold butter and cut it into the dry mixture until it resembles coarse crumbs. Fold in the grated apple.
- Slowly pour in the buttermilk and gently fold until you have a wet, sticky dough.
- Lightly flour a clean surface and turn out the sticky dough. Knead gently for about 30 seconds.
- Flatten the dough into an oval shape about 1-inch thick and fold the sides inward to create layers, repeating the folding about seven times.
- Cut out rounds using a floured biscuit cutter and place them on an ungreased baking sheet.
- Bake for 20 minutes until golden brown and puffed.
- While the biscuits bake, melt the unsalted butter, stir in honey and a pinch of salt for the glaze.
- Brush the warm honey butter glaze generously over the tops of the biscuits immediately after removing from the oven.
