For the Custard
  • 3 large egg yolks
  • 2 large whole eggs
  • 1 cup white sugar or cane sugar
  • 1/3 cup cornstarch or tapioca starch for gluten-free
  • 1/2 teaspoon salt
  • 2.5 cups whole milk or nut milk
  • 1.75 cups heavy cream or coconut cream for non-dairy
  • 7 oz dark chocolate chopped
For the Glaze
  • 1 tablespoon jam raspberry or apricot ideal

Step-by-Step Instructions
  1. In a mixing bowl, sift together flour, icing sugar, cocoa powder, and salt. Melt the butter and mix in vanilla extract, then blend into dry ingredients until a dough forms. Press into a tart pan and chill for about 30 minutes.
  2. In a saucepan over medium heat, whisk together egg yolks, whole eggs, white sugar, cornstarch, and salt. Gradually pour in whole milk and heavy cream while stirring. Heat until thickened (8-10 minutes), then fold in dark chocolate until melted.
  3. Preheat your oven to 350°F (180°C). Pour the chocolate custard into the chilled tart base. Bake for about 30-35 minutes until set with a jiggle in the center.
  4. Cool the flan to room temperature, then refrigerate for at least 2 hours. Before serving, brush the top with jam for a shiny finish.
