Preparation
  1. Melt 2 tablespoons of salted butter and 1 tablespoon of olive oil in a skillet over medium heat. Add thinly sliced sweet onions with a pinch of sea salt, coarse black pepper, and 1 teaspoon of granulated sugar. Stir for about 15-20 minutes until caramelized.
  2. In a large bowl, combine 1 pound of ground beef, 1 cup of Italian-style breadcrumbs, 1/2 cup of whole milk, and 1 large egg. Stir in the French onion soup mix, 2 tablespoons of Worcestershire sauce, and half the cooled caramelized onions. Mix gently to avoid overmixing.
  3. Transfer the meat mixture into the Crockpot, shaping it into a loaf. Smooth the surface with a spatula and top with the remaining caramelized onions.
  4. Cover the Crockpot and set it to low. Cook for 6-8 hours until the internal temperature reaches 160°F (70°C).
  5. About 15 minutes before cooking is complete, place slices of Swiss cheese on top and pour some melted butter over the cheese. Re-cover and let the cheese melt.
  6. Once cooked, remove from Crockpot and let it rest for a few minutes before slicing. Garnish with fresh thyme and serve.
