Preparation
- Melt 2 tablespoons of salted butter and 1 tablespoon of olive oil in a skillet over medium heat. Add thinly sliced sweet onions with a pinch of sea salt, coarse black pepper, and 1 teaspoon of granulated sugar. Stir for about 15-20 minutes until caramelized.
- In a large bowl, combine 1 pound of ground beef, 1 cup of Italian-style breadcrumbs, 1/2 cup of whole milk, and 1 large egg. Stir in the French onion soup mix, 2 tablespoons of Worcestershire sauce, and half the cooled caramelized onions. Mix gently to avoid overmixing.
- Transfer the meat mixture into the Crockpot, shaping it into a loaf. Smooth the surface with a spatula and top with the remaining caramelized onions.
- Cover the Crockpot and set it to low. Cook for 6-8 hours until the internal temperature reaches 160°F (70°C).
- About 15 minutes before cooking is complete, place slices of Swiss cheese on top and pour some melted butter over the cheese. Re-cover and let the cheese melt.
- Once cooked, remove from Crockpot and let it rest for a few minutes before slicing. Garnish with fresh thyme and serve.

Notes
For best results, slice onions thinly for even caramelization. Don't overmix the meatloaf mixture to maintain tender texture. Check cheese carefully to prevent burning. Use fresh ingredients for enhanced flavor.
