  • 1 lb Ground Beef or ground turkey for a lighter option
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 1 can Kidney Beans drained
  • 1 can Black Beans drained
  • 1 can Crushed Tomatoes
  • 1 can Diced Tomatoes
  • 2 tbsp Tomato Paste
  • 1 cup Beef Broth or vegetable broth for vegetarian chili
  • 2 tbsp Chili Powder adjust based on spice tolerance
  • 1 tsp Ground Cumin
  • 1 tsp Smoked Paprika
  • 1 tsp Black Pepper or white pepper
  • 1 tsp Salt adjust to taste
  • 1 tsp Oregano or Italian seasoning
  • 1 tbsp Brown Sugar optional
Optional Toppings
  • 1 cup Shredded Cheese for garnishing
  • 1 cup Sour Cream for serving
  • 2 tbsp Green Onions sliced for garnishing

Method
 

Cooking Steps
  1. In a large skillet over medium heat, brown the ground beef with diced onion and minced garlic for 5-7 minutes.
  2. Transfer the beef mixture to the slow cooker, scraping the skillet to include all bits.
  3. Add drained kidney and black beans, crushed tomatoes, and diced tomatoes to the slow cooker.
  4. Stir in tomato paste and beef broth, mixing thoroughly.
  5. Sprinkle in chili powder, cumin, smoked paprika, salt, and pepper; adjust seasoning to taste.
  6. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  7. After cooking, stir and adjust consistency with broth or water as needed.
  8. Ladle into bowls and top with shredded cheese, sour cream, or green onions.
