Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper.
  2. Boil salted water in a large pot, add fresh carrots, and cook for 10–12 minutes until fork-tender.
  3. Drain the carrots and let them cool slightly, then smash each carrot round to about ½ inch thick.
  4. Drizzle smashed carrots with olive oil and season with garlic powder, smoked paprika, salt, and pepper.
  5. Sprinkle grated Parmesan cheese on top and roast in the oven for 20–25 minutes, flipping halfway.
  6. Once roasted, top with chopped parsley and serve hot.
