Method
 

Preparation Steps
  1. Grate 2-3 russet potatoes into a large bowl. Drain excess moisture by squeezing in a clean kitchen towel.
  2. Mix in cornstarch, salt, black pepper, and chopped green onions to the drained potatoes.
  3. Add about 1 cup of grated mozzarella cheese to the potato mixture and fold it in gently.
  4. Heat a non-stick pan with 2 tablespoons of neutral oil over medium heat until shimmering.
  5. Scoop portions of the potato mixture into the hot oil, flattening them into round shapes.
  6. Fry the pancakes for 3-4 minutes on each side until golden brown.
  7. Sprinkle additional grated mozzarella cheese on top of each pancake while frying.
  8. Transfer pancakes to a serving plate lined with paper towels and garnish with chopped green onions.
