Ingredients
  

For the Salad
  • 2 cups Honeycrisp apple substitute with Gala, Pink Lady, or Jonagold if out of season
  • 1 bunch Broccoli or a convenient 12-ounce prepared bag
  • 1 small Red onion adjust to taste or omit
  • 1 cup Raisins can substitute with dried cranberries or cherries
  • 1/2 cup Sunflower seeds substitute with pumpkin seeds or nuts
  • 4 slices Bacon or consider vegan bacon or smoked almonds
For the Dressing
  • 1 cup Plain yogurt Greek yogurt thickens it further, or use dairy-free yogurt
  • 1/4 cup Milk can use almond milk or other non-dairy alternatives
  • 2 tablespoons Apple cider vinegar any vinegar can be substituted
  • 1 tablespoon Sugar or honey adjust to taste or substitute with maple syrup
  • Salt to taste
  • Pepper to taste

Method
 

Step-by-Step Instructions
  1. Prepare the dressing by combining plain yogurt, a splash of milk, apple cider vinegar, sugar or honey, and salt and pepper in a mason jar. Shake until well blended and creamy. Refrigerate as you prepare the salad ingredients.
  2. Chop the broccoli into bite-sized florets and slice the Honeycrisp apple into thin, crisp slices. Optionally, sprinkle lemon juice on the apple slices to prevent browning. Add to a large mixing bowl.
  3. Finely slice the red onion and add to the bowl. Pour in the raisins and sunflower seeds, then gently toss all ingredients together to combine.
  4. Retrieve the chilled dressing and pour it evenly over the salad. Toss gently to combine, then let the salad rest in the refrigerator for 30 to 60 minutes.
  5. Before serving, crumble crispy bacon over the salad and toss gently once more to distribute. Serve chilled.
