  • 1 tsp salt adjust to taste
  • 1 tsp black pepper freshly ground is best
  • 1/2 tsp red pepper flakes optional
For the Creaminess
  • 1 cup feta cheese can substitute with goat cheese or ricotta

Cooking Steps
  1. Begin by bringing a large pot of salted water to a rolling boil. Once boiling, gently add the gnocchi and cook for about 2-3 minutes until they float to the surface. Remove them from the pot and drain.
  2. In a large frying pan, heat a drizzle of olive oil over medium-high heat. Add the drained gnocchi in a single layer and cook undisturbed for 2-3 minutes until golden brown.
  3. Gently stir the gnocchi to turn them over and cook for an additional 2-3 minutes until all sides are crispy and golden brown.
  4. Lower the heat to medium, add minced garlic to the pan, and sauté for about 1 minute until fragrant.
  5. Toss in the fresh spinach, stirring to combine. Cook for about 2-3 minutes until the spinach wilts down significantly.
  6. Season the dish with salt, freshly ground black pepper, and optional red pepper flakes to taste. Stir everything together.
  7. Remove from heat and add crumbled feta cheese to the mixture, stirring until it melts into a creamy texture.
