Cooking Steps
- Begin by bringing a large pot of salted water to a rolling boil. Once boiling, gently add the gnocchi and cook for about 2-3 minutes until they float to the surface. Remove them from the pot and drain.
- In a large frying pan, heat a drizzle of olive oil over medium-high heat. Add the drained gnocchi in a single layer and cook undisturbed for 2-3 minutes until golden brown.
- Gently stir the gnocchi to turn them over and cook for an additional 2-3 minutes until all sides are crispy and golden brown.
- Lower the heat to medium, add minced garlic to the pan, and sauté for about 1 minute until fragrant.
- Toss in the fresh spinach, stirring to combine. Cook for about 2-3 minutes until the spinach wilts down significantly.
- Season the dish with salt, freshly ground black pepper, and optional red pepper flakes to taste. Stir everything together.
- Remove from heat and add crumbled feta cheese to the mixture, stirring until it melts into a creamy texture.
