- Trim the base of the enoki mushrooms to separate them gently. Slice into 1/4 inch layers for even cooking.
- Heat enough neutral oil in a heavy-bottomed pot to 375°F (190°C). Use a thermometer to ensure accuracy.
- In a bowl, combine the dry ingredients for the batter and whisk in cold sparkling water until smooth.
- Dip each cluster of mushrooms into the batter ensuring they are well-coated, allowing excess to drip off.
- Carefully lower mushrooms into hot oil and fry for 1-2 minutes until golden brown, flipping occasionally.
- Drain on a wire rack and season lightly with salt and furikake if desired. Serve warm with dipping sauces.
