- In a large mixing bowl, gently combine the lump crab meat, breadcrumbs, and fresh vegetables. Add Old Bay seasoning, salt, and pepper.
- Take an egg roll wrapper and spoon about 2 tablespoons of the crab mixture onto the center. Fold and roll tightly to seal.
- Heat vegetable oil in a frying pan to 350°F. Test temperature with a thermometer.
- Fry 3-4 egg rolls in hot oil for 3-5 minutes until golden brown, turning occasionally.
- Remove fried rolls and drain on paper towels. Serve hot with dipping sauces.
