Method
 

Step-by-Step Instructions
  1. Fill a large pot with water and add a pinch of salt. Bring to a boil. Cook baby potatoes for 15-20 minutes until fork-tender.
  2. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or grease it.
  3. Smash each potato on the baking sheet to about ½-inch thickness.
  4. In a bowl, mix olive oil, melted butter, minced garlic, salt, black pepper, smoked paprika, and oregano.
  5. Brush each smashed potato with the garlic-infused oil mixture.
  6. Sprinkle grated Parmesan cheese on top of each potato.
  7. Bake for 25-30 minutes until golden brown and crispy.
  8. For an extra crispy finish, broil for the last 2-3 minutes.
  9. Garnish with fresh parsley and red pepper flakes before serving.
