  • 2 tbsp Taco Seasoning (Homemade) Feel free to use store-bought.
For the Tortillas
  • 8 pieces Fajita-Sized Flour Tortillas Corn tortillas can be used but may tear more easily.
For the Avocado Sauce
  • 1 piece Avocado Select ripe avocados that yield to gentle pressure.
  • 1/2 cup Sour Cream Greek yogurt can be used as a healthier alternative.
  • 1/4 cup Cilantro Omit if not a fan.
For Cooking
  • 1 tbsp Avocado Oil (or Olive Oil) Ideal for sautéing and brushing tortillas.

Method
 

Step-by-Step Instructions
  1. Make the Creamy Avocado Sauce by blending half a ripe avocado, sour cream, lime juice, cilantro, kosher salt, and a splash of water until smooth. Refrigerate while preparing the rest.
  2. Cook the Turkey Mixture in a non-stick pan with 1 tablespoon of avocado oil over medium heat for 4–5 minutes. Stir in the taco seasoning and diced onions until softened.
  3. Finish Taco Filling by mixing in drained black beans and green chiles. Cook for another 15 minutes on medium-low heat.
  4. Prepare Tacos for Baking by preheating your oven to 425°F (220°C). Layout tortillas on a baking sheet and fill with turkey mixture and cheese.
  5. Bake Tacos in the preheated oven for 1–2 minutes until cheese melts, then brush with avocado oil and bake for another 10–12 minutes until golden brown.
  6. Serve warm alongside the creamy avocado sauce for dipping.
