- Let the chicken thighs sit at room temperature for about 15 minutes. Pat them dry with paper towels.

- In a medium bowl, mix garlic powder, onion powder, paprika, oregano, thyme, kosher salt, and black pepper.

- Drizzle the chicken thighs with olive oil and coat thoroughly. Sprinkle two-thirds of the spice blend over them.

- Place a wire rack on a baking sheet, and lay the seasoned chicken thighs skin-side up on the rack.
