  • 1 cup Red Enchilada Sauce Can substitute with green enchilada sauce
For the Taco Assembly
  • 2 cups Oaxaca Cheese Substitute with your favorite melting cheese
  • 8 pieces Corn Tortillas Warm to prevent cracking
For Baking
  • 2 tbsp Olive Oil Can be replaced with another cooking oil

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C).
  2. In a large skillet over medium-high heat, add the ground beef and cook until browned, about 5-7 minutes.
  3. Reduce the heat to medium and stir in the taco seasoning and red enchilada sauce; simmer for 3-5 minutes.
  4. Wrap the corn tortillas in a damp paper towel and microwave for 30-60 seconds.
  5. Lightly brush one side of each warmed tortilla with olive oil.
  6. On one half of each tortilla, add cheese, beef filling, and more cheese; fold over.
  7. Arrange tacos on a baking sheet and bake for 16 minutes until crisp and golden.
  8. Allow to cool for about 3 minutes before serving with dips.
