- Begin by trimming the ends off the fresh medium zucchinis, then slice each in half crosswise. Cut the halves into ½-inch thick 'fries.'
- Prepare three shallow bowls: one with all-purpose flour, one with beaten large eggs, and one with Panko breadcrumbs, grated Parmesan cheese, Italian seasoning, garlic powder, salt, and black pepper mixed together.
- Coat each zucchini fry in flour, dip it in the beaten egg, and then roll it in the breadcrumb mixture until fully coated.
- Preheat your air fryer to 400°F. Arrange the coated zucchini fries in a single layer in the air fryer basket.
- Lightly spray the tops of the zucchini fries with olive oil and air fry at 400°F for 10-12 minutes, shaking the basket halfway through.
