Step-by-Step Instructions
  1. Begin by trimming the ends off the fresh medium zucchinis, then slice each in half crosswise. Cut the halves into ½-inch thick 'fries.'
  2. Prepare three shallow bowls: one with all-purpose flour, one with beaten large eggs, and one with Panko breadcrumbs, grated Parmesan cheese, Italian seasoning, garlic powder, salt, and black pepper mixed together.
  3. Coat each zucchini fry in flour, dip it in the beaten egg, and then roll it in the breadcrumb mixture until fully coated.
  4. Preheat your air fryer to 400°F. Arrange the coated zucchini fries in a single layer in the air fryer basket.
  5. Lightly spray the tops of the zucchini fries with olive oil and air fry at 400°F for 10-12 minutes, shaking the basket halfway through.
