- In a mixing bowl, combine shredded chicken, Monterey Jack cheese, taco seasoning, and diced green chiles. Mix thoroughly to ensure even distribution of flavors.
- Warm your gluten-free tortillas by wrapping them in a damp paper towel and microwaving for about 15-20 seconds.
- Lay a warmed tortilla flat on a clean surface. Spoon approximately 2 tablespoons of the filling into the center of the tortilla. Fold the sides inward and start rolling from the bottom.
- Fill the air fryer basket with up to 5 taquitos at a time, ensuring there’s space between them for proper air circulation. Lightly spray the taquitos with avocado oil.
- Set your air fryer to 380°F and cook the taquitos for about 5-7 minutes. Remove the basket and check for doneness.
- After removing the cooked taquitos, you can continue with the remaining filling and tortillas.
- Once all the taquitos are cooked, plate them up and serve with your favorite condiments.
