- Bring a large pot of salted water to a boil. Add rigatoni and cook for 10-12 minutes until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium-high heat. Add steak pieces and sear for 3-4 minutes until browned. Remove and set aside.
- In the same skillet, add diced onion and bell pepper. Sauté for 5 minutes until soft. Add minced garlic, sauté for an additional minute.
- Pour in heavy cream, scrape up browned bits. Stir in blue cheese, oregano, salt, and pepper. Cook until cheese melts and sauce thickens.
- Add seared steak and drained rigatoni to the skillet. Toss to coat everything in the sauce.
- Preheat oven to 375°F (190°C). Transfer the mixture to a greased baking dish. Sprinkle mozzarella on top.
- Bake for 15-20 minutes until cheese is melted and golden brown.
- Remove from oven, let sit for a few minutes. Garnish with fresh parsley before serving.
