  • 1 pound Steak (sirloin or ribeye) Choose well-marbled cuts for best results.
  • 1 medium Onion Shallots can enhance the flavor profile.
  • 1 medium Bell Pepper Any sweet pepper variety works.
  • 3 cloves Garlic Fresh garlic is preferred.
  • 1 cup Heavy Cream Consider half-and-half or yogurt mix for a lighter version.
  • 1 cup Blue Cheese Adjust to preference for a more subtle or bold taste.
  • 1 teaspoon Dried Oregano Fresh oregano can replace it at a 3:1 ratio.
For the Toppings
  • 1 teaspoon Salt Adjust according to taste.
  • 0.5 teaspoon Black Pepper Adjust according to taste.
  • 1 cup Mozzarella Cheese Try cheddar or a cheese blend for different flavor.
  • 0.25 cup Fresh Parsley Basil or chives can also be alternatives.

Method
 

Step‑by‑Step Instructions
  1. Bring a large pot of salted water to a boil. Add rigatoni and cook for 10-12 minutes until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium-high heat. Add steak pieces and sear for 3-4 minutes until browned. Remove and set aside.
  3. In the same skillet, add diced onion and bell pepper. Sauté for 5 minutes until soft. Add minced garlic, sauté for an additional minute.
  4. Pour in heavy cream, scrape up browned bits. Stir in blue cheese, oregano, salt, and pepper. Cook until cheese melts and sauce thickens.
  5. Add seared steak and drained rigatoni to the skillet. Toss to coat everything in the sauce.
  6. Preheat oven to 375°F (190°C). Transfer the mixture to a greased baking dish. Sprinkle mozzarella on top.
  7. Bake for 15-20 minutes until cheese is melted and golden brown.
  8. Remove from oven, let sit for a few minutes. Garnish with fresh parsley before serving.
