Ingredients
  

For the Pasta
  • 12 oz Cherry Tomatoes Substitute with grape tomatoes or other small varieties if necessary.
  • 12 oz Pasta Select any preferred type, normally spaghetti or penne.
For the Sauce
  • 1 cup Ricotta Cheese Cream cheese or mascarpone can be used as substitutes.
  • 1/2 cup Grated Parmesan Cheese Nutritional yeast can be used for a vegan alternative.
  • 1/4 cup Fresh Basil Substitute with parsley if unavailable.
  • 1 tbsp Lemon Juice Vinegar can also be a substitute.
For Roasting
  • Olive Oil Can be replaced with avocado oil for a different flavor.
  • 4 cloves Garlic Use roasted garlic for a milder taste.
  • 1 tsp Dried Oregano Fresh oregano can substitute in an increased quantity.
  • 1 tsp Salt Adjust based on taste.
  • 1/2 tsp Black Pepper White pepper is a mild alternative.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Halve the cherry tomatoes and spread them on a prepared baking sheet.
  3. Drizzle olive oil over the tomatoes and season with minced garlic, oregano, salt, and pepper.
  4. Roast the tomatoes for 20 to 25 minutes.
  5. Boil a large pot of salted water and cook your pasta according to package instructions.
  6. In a mixing bowl, combine ricotta cheese, grated Parmesan, chopped basil, and lemon juice.
  7. Reserve about ½ cup of the starchy pasta water before draining the cooked pasta.
  8. Combine the drained pasta and roasted tomatoes, tossing to mix.
  9. Fold in the ricotta sauce, adding reserved pasta water as needed.
  10. Taste and adjust seasoning before serving hot.
