- Prep Chicken: Cut the chicken into thin strips and season with sea salt and ground pepper. Let sit for 5 minutes.
- Brown Chicken: Melt 2 tbsp of butter in a large skillet over medium-high heat. Add chicken strips and cook for approximately 8 minutes until golden brown. Remove and set aside.
- Sauté Onions and Garlic: In the same skillet, add diced onion and garlic. Sauté for about 5 minutes until translucent.
- Create Sauce Base: Pour in chicken stock and add roasted red peppers. Simmer for 5 minutes.
- Add Cream and Cheese: Stir in heavy cream and Parmesan until smooth. Return to heat and bring to a simmer.
- Simmer Chicken: Add Italian seasoning and pepperoncini. Return the chicken to the skillet and cook for another 3–5 minutes.
