Method
 

Prep Instructions
  1. Chop onions, garlic, and mushrooms, and set aside. Cut beef stew meat into bite-sized pieces.
  2. In a large skillet over medium-high heat, melt butter and sear the beef for 2-3 minutes on each side until browned.
  3. Transfer the beef to the crockpot and layer with mushrooms, onions, and garlic. Pour beef broth and sprinkle flour on top.
  4. Cover and cook on low for 7-8 hours or high for 4-5 hours until beef is fork-tender.
  5. About 15 minutes before serving, temper sour cream with hot broth, then stir into the crockpot.
  6. Cook egg noodles according to package instructions, then drain.
  7. Serve stroganoff over egg noodles and garnish with parsley or chives.
