  1. Melt the butter in a large skillet over medium heat until bubbling and slightly foamy.
  2. Add minced garlic and diced jalapeño and sauté for about 1 minute until fragrant.
  3. Stir in corn and cook for 5-7 minutes until heated through and lightly charred.
  4. Reduce heat to low and add softened cream cheese and sour cream; stir until smooth.
  5. Mix in cotija cheese, Monterey Jack cheese, chili powder, smoked paprika, and salt; stir until cheeses melt.
