  • 1 cup cottage cheese whole or 2% for optimal flavor
  • 2 tablespoons olive oil for sautéing garlic
  • 2 cloves garlic minced
  • 1 cup Parmesan cheese freshly grated
  • 1 teaspoon Italian seasoning
  • ½ cup pasta cooking water reserved
  • to taste kosher salt
  • to taste black pepper
  • 12 ounces pasta any type of pasta works

Method
 

Step-by-Step Instructions
  1. Blend the milk and cottage cheese in a high-speed blender until smooth, about 30-60 seconds.
  2. Heat olive oil in a medium saucepan over medium heat. Sauté minced garlic for 1-2 minutes until fragrant.
  3. Add the blended mixture to the pan with sautéed garlic. Mix in Parmesan cheese and Italian seasoning. Stir until smooth.
  4. Cook pasta until al dente according to package instructions. Reserve ½ cup of cooking water, then drain.
  5. Combine the drained pasta with the sauce. Add reserved pasta water as needed for desired consistency.
  6. Season with salt and pepper to taste and serve immediately.
