Cooking Steps
- Bring a large pot of salted water to a boil. Add diced potatoes and cook for 10-12 minutes until fork-tender. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Season cod with salt and pepper. Sear for 4-5 minutes on each side until golden brown and flaking.
- In the same skillet, add minced garlic and sauté for 1 minute. Pour in heavy cream and simmer. Stir in chopped rosemary and adjust seasoning.
- Add boiled potatoes to the skillet and toss to coat in the sauce. Simmer on low for 2-3 minutes.
- Return the seared cod to the skillet, spoon sauce over the cod, and cook for an additional 2 minutes on low heat.
- Sprinkle fresh parsley over the dish and serve with lemon wedges.
