  • 4 fillets Cod Can substitute with haddock
For the Potatoes
  • 4 medium Potatoes Yukon Gold or Russet recommended
For the Cream Sauce
  • 1 cup Heavy Cream Can use half-and-half or plant-based cream
  • 2 tablespoons Olive Oil Butter can be used instead
  • 2 tablespoons Fresh Rosemary Use dried rosemary at half amount if needed
  • 2 cloves Garlic Can substitute with shallots
For Seasoning
  • to taste Salt
  • to taste Pepper
For Serving
  • 2 wedge Lemon For serving
  • 2 tablespoons Fresh Parsley Chopped, for garnish

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil. Add diced potatoes and cook for 10-12 minutes until fork-tender. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Season cod with salt and pepper. Sear for 4-5 minutes on each side until golden brown and flaking.
  3. In the same skillet, add minced garlic and sauté for 1 minute. Pour in heavy cream and simmer. Stir in chopped rosemary and adjust seasoning.
  4. Add boiled potatoes to the skillet and toss to coat in the sauce. Simmer on low for 2-3 minutes.
  5. Return the seared cod to the skillet, spoon sauce over the cod, and cook for an additional 2 minutes on low heat.
  6. Sprinkle fresh parsley over the dish and serve with lemon wedges.
